Honey-Mustard Salad Dressing
I like this as a nice, quick, simple dressing; a little change from my more usual vinaigrette. For some reason I particularly like it on a basic (mostly) green salad with hard boiled eggs. Although I can see the salad with grated old cheddar, too.

2 tablespoons honey
2 tablespoons Dijon mustard
1/2 to 1 teaspoon hot English mustard (optional)
2 tablespoons apple cider vinegar (or lemon juice)
2 tablespoons sunflower seed oil
salt & pepper
Put the honey in a small mixing bowl or jar, and heat it until it is runny. (The microwave is good for this; I find 15 to 20 seconds quite sufficient.) Whisk or shake in the remaining ingredients, with salt and pepper added to taste. Check your mustard for saltiness first; they vary.
