Dinner In a Pumpkin
A fun way to celebrate the fall season is to have "Dinner in a Pumpkin." Here is the recipe we did, but I am sure there are some other great ones out there. Please comment with any good casserole recipes that would go well cooked in a pumpkin. The kids seem to like this dinner, and it is even more fun for them that it is cooked in a "Jack-o-Lantern."
Dinner in a Pumpkin
1 small to medium pumpkin
1 onion chopped
2 tablespoons vegetable oil
1.5 lbs ground beef
2 tablespoons soy sauce
2 tablespoons brown sugar
4 oz. sliced mushrooms
1 can cream of chicken soup
1.5 cups f cooked rice
8 oz. sliced water chestnuts, drained (optional)
Preheat oven to 350 degrees F. Cut off the top of the pumpkin and thoroughly clean out seeds and pulp. Paint an appropriate face on the front of the pumpkin with a permanent marking pen or acrylic paint.
In a large skillet, saute onions in oil until tender, add meat and brown. Drain drippings from skillet. Add soy sauce, brown sugar, mushrooms and soup.
Simmer 10 minutes, stirring occasionally. Add cooked rice and water chestnuts. Spoon mixture into the cleaned out pumpkin shell. Replace pumpkin top and place entire pumpkin, will filling on a baking sheet.
Bake at 350 degrees F for 1 hour or until inside meat of pumpkin is tender. Take pumpkin out of oven. Remove pumpkin lid and serve filling and pumpkin together.
