Toasted Onion Flakes Crackers
These crackers started off being an attempt to copy the flavour of my favourite crackers, Breton - who now offer some very good gf crackers. But I find it is still cheaper to make home-made than to buy store-ready!
I enjoy making these crackers, the dough handles easily, and I also enjoy eating them. They keep well. They can be made with or without the toasted onion flakes -- add your own favourite flavours instead, or leave them plain.
**To toast the onion flakes -- I used about 3 tbsp (amount can be adjusted to taste) of dried onion flakes, put them on a tin foil lined pan and toasted them for a few minutes in my toaster oven -- watch them carefully so they do not burn!
Recipe
- 1/4 cup white bean flour (or chick pea flour)
- 1/4 cup corn starch
- 1/4 cup arrowroot starch/flour
- 1/4 cup brown rice flour
- 1/4 cup sweet rice flour
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp xanthan gum
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 3 tbsp. toasted onion flakes, (or flaxseed or poppy seed or herbs of choice - adjust amount as desired/needed for flavour)
- 1/4 cup coconut oil
- 1/4 cup water
- 2 tbsp milk (or water)
- Kosher salt - for sprinkling on top (optional)
- Mix dry ingredients together
- Mix coconut oil with water/milk and stir into the dry ingredients working it with hands into a ball.
- Turn out on pastry mat or very lightly dusted counter (I find I don't need any dusting flour), flatten ball somewhat and cover with sheet of plastic wrap and roll out very thin ... about a 13" square.
- Using a 2 1/4 " round cutter cut out as many crackers as you can ... remove the excess dough and roll out again, cutting more circles until all the dough is used up. Prick crackers with fork.
- Place on parchment lined cookie sheet. Sprinkle with kosher salt if desired.
- Bake at 250' for about 15 minutes or until lightly browned.
