Bruchetta
Bruchetta is such a refreshing appetizer ~ the aroma and flavor of fresh tomatoes and herbs make it a favorite. It's also very easy to make and later in the summer, when we have both fresh tomatoes and fresh basil in the garden, it's super convenient.
4 plum tomatoes, diced
2 teaspoons or so of extra virgin olive oil
1/2 cup diced onion
1 teaspoon minced garlic (I buy it in a jar from Aldi - fresh is even better)
dash of sea salt
dash of pepper
handful of fresh basil leaves (chopped)
1 baguette, sliced and toasted
Mix together and scoop on top of toasted bread. I also like to use it as a topping on burgers.
