Crab and Cheese Stuffed Manicotti
I found this recipe in a healthy cooking magazine. I changed it up a wee bit. If you like the flavors of pasta, crab and cheeses combined, this recipe is for you.
- 6 manicotti shells, cooked
- 2 cans (120 g size each) of crabmeat, drained
- 1/3 cup ricotta cheese
- 1/3 cup mozzarella cheese
- 1/4 teaspoon lemon pepper
- 1/8 teaspoon garlic powder
- Parsley, fresh or dried, used for garnish
Sauce:
- 1 tablespoon butter
- 4 teaspoons flour
- 1 cup milk
- 1/4 teaspoon pepper
- 1 tablespoon parmesan cheese, grated
- In a saucepan, melt butter, stir in flour until smooth, add milk and pepper, cook and stir until thickened.
- Remove from heat and stir in parmesan cheese.
- In a small bowl, mix together crabmeat, ricotta cheese, mozzarella, lemon pepper, and garlic powder.
- Fill cooked manicotti shells with this mixture.
- Spoon 1/4 cup of sauce in an 8" x 8" greased pan and top with stuffed manicotti.
- Pour remaining sauce over top and bake at 350 for 25 minutes.
- Sprinkle with parsley and serve.
