Chicken Tortilla Soup
I love making soups and most of the time I start from scratch, but when I do tortilla soup I start with a mix, like this one. Then I add cans of tomatoes and some frozen corn and some cooked chicken and sometimes even some diced onion and pepper and it makes it seem homemade.
On my last batch, I added chicken that had cooked the day before in a crock pot with taco seasoning for about 4 hours, so it was a zesty addition. Then, be sure to add some shredded cheese and tortilla strips to the top…no one will ever know that a mix in an envelope was involved.
